This process usually takes place by bringing the product to a temperature of 2/3°C or lower, down to -18°C in the case of deep-freezing.
Because of the need for rapid cooling, for the same size of chamber, higher powers are required than for a normal cold store. Furthermore, more attention must be paid to the type of product to be culled in order to ensure optimal preservation.
The electronic control of these plants can be managed either through a PLC with touch display, which offers greater interactivity and customisation, or through pre-configured HVAC/R control devices, which may be more suitable depending on the specific needs of the plant and the product handled.
